Våffeldagen. The day of waffles. Doesn’t it sound like a dream? Like you are floating around on big fluffy clouds made out of waffles and various additions like cream, ice cream and jam. Well, that’s what I imagine at least. I am guessing that this is what most Swedish people think about when the day of waffles is getting in the near. Personally I really think we should let us feast in those gloriously crunchy, buttery amazing tasting waffles and feel darn good about it! Because that’s what they are - darn good!

Våffeldagen came out of the Virgin Mary’s Annunciation Day which we in Sweden call Jungfru Marie Bebådelsedag. A while ago we called Mary Vår Fru (Our Lady) which also made that particular day Vårfrudagen (Our lady day). This word has, cause of the simularities, later been renamed to Våffeldagen and we are now kind of celebrating Virgin Mary and the plantation of Jesus in her womb with eating waffles. Yay I say! I would accept any special reason to have a day of sweets. Why we decided to eat waffles now when its spring has its simple explanation to that in the past, spring was the season where we once again had lots more eggs, milk and butter to eat.
The past few years a diet called Lchf – Low Carb High Fat, has become very popular in Sweden. Instead of using eggs, milk, butter and flour to make waffles the people who eat Lchf make them out of eggs, cream, butter and coconut shred or almond flour. That’s just two examples. Other suggestions to how one could prepare their waffle is with spelt instead of wheat (of course this is a no longer lchf), or if you want them to be more like a lunch rather then dessert you could serve them with for example ham, cottage cheese and some veggies. You could also add protein powder in addition to a part of the flour.

As it seems there is always an ongoing process in remaking a “unhealthy” dish into a little bit more “healthy” one, both here in Sweden and what it seems in the rest of the world. I wonder what the next step for the Swedish kanelbulle and Kanelbullens dag – Cinnamon Bun Day is. But that’s a different topic for a different article.
